If you're reading The Valley Of Moonfire, you need the heirloom recipe for fried okra. Or even if you're not reading this great lil' mystery, this is a good side dish veggie!
2 lbs. okra, sliced
3/4 cup cornmeal
1/2 cup all purpose flour
1/2 tsp salt
pinch of black pepper, or to taste
1/4 cup vegetable oil
1/2 tsp or two of bacon drippings
Slice okra, discarding stems and any tough pods. Those bad boys won't fry up well.
Preheat oven to 350 F.
Mix together okra, cornmeal, flour, salt and pepper in a large bowl. Coat well.
Heat oil and bacon drippings in a large, cast iron skillet. (I use a 12 inch)
When a drop of water added to the heating oil spits back at you, its time to fry!
Brown the okra on one side, about 3 minutes, then turn, stirring gently. Once the okra is browned, about three more minutes. place in oven and crisp those babies up, to fork tender, about 10 minutes.
Enjoy with mashed potatoes, grilled chicken, salad and sweet tea while you read, The Valley Of Moonfire!
